End grain cutting boards are the professional chef's choice because the
end grain fibers will not dull your expensive knives. Also, they have
the ability to "self-heal" when cut on - essentially, the fibers
re-close to show a lot less wear on your boards. Leading national mass
manufacturers sell these boards for $70 plus.

Each
board has unique characteristics in shading, markings and color
variations, so no board is identical to another. This is due to the
nature of natural woods and also the hand making process. Cherry wood
will continue to darken over time - this is normal.
